WHAT I EAT IN A WEEK (vegan D1 athlete)

Here’s a week of vegan eats from January 1st-7th to give you some vegan meal inspo for the new year! Make sure to fuel for YOU and use this just as simple meal inspo, because everyone has different needs! I haven’t been able to work out AT ALL for 3 months due to a hip injury, so my fueling looks a little different, but I’m still eating ALLLL the good foods because you need fuel to heal and to simply thrive as a human! 🙂
