As requested, here’s a sample of what I eat in a day as a vegan cross country and track athlete in college! I’m currently healing from a stress fracture, so I’m not doing any form of exercise for the next 9 weeks. However, I’m still fueling with ALL the vegan grub because proper nutrition is sooo important! I hope this can provide you with some meal inspiration, but remember that everyone’s needs are so different, so be sure to listen to your body and rememeber that food is fuel and you gotta nourish to flourish! 🙂
