Vegan Burnt Garlic Pasta is a creamy pasta with chickpea sauce. This is so delicious and easy to make that all the vegans out there should definitely try it out. It is also budget friendly and can be made with the basic ingredients at home. I have made this pasta sauce without cheese and milk.
I am not a vegan but I still loved it so much that I will make it again for sure!!
Shell Pasta 1oo gms
Boiled Chickpea 200 gms
Garlic 4-5 pods
Onion 1 medium sized
Carrot 1 medium sized
Broccoli( Optional) 5-5 florets
Chilli Flakes 2 tbsp
Oregano 2 tbsp
Dried Basil( Optional) 2 tbsp
Salt As per taste
Pepper 2 tsp
Water As Required
1. Finely chop 4-5 Garlic pods
2. Peel and finely chop 1 onion
3. Peel and finely chop 1 medium sized carrot
4. Cut Florets of Broccoli and Boil it in Water for 2-3 minutes( Blanche)
5. Boil 100 gm Shell pasta/any pasta of your choice
6. Soak Chickpea overnight/for 6-8 hours and boil them until smash able
7. In a pan, add a little oil, add the finely chopped garlic. Saute till it turns dark brown. Add the finely chopped onion, saute till transparent. Add the finely chopped carrots and saute well. Add salt, pepper powder, chilli flakes, oregano and dried basil.
8. In a mixer jar, add the prepared mixture, add the boiled chickpea, add chilli flakes, oregano, dried basil and water as required to blend
9. Blend it into a smooth sauce consistency by adding water little by little.
10. In a pan, add oil, add broccoli, the prepared sauce and the boiled pasta. Mix well and heat for about 2 minutes while stirring continuously
11. Your Vegan Burnt Garlic Pasta is now ready to serve!!
