Bajra vada is a popular Gujarati cuisine made up with mixture of pearl millet flour and maize flour(corn flour) with fenugreek leaves, sesame seeds, ginger chilli garlic paste and other Indian spices and herbs. Although the ingredients are many, they are all common and you can find it in every households. You can accompany this vada with your evening tea or green chutney. bajra is a warmin food, so its good for winters.Or one can serve it with curd or spiced curd and they can be packed for picnics and travels.They stay well in an airtight container or jar for 8 to 10 days.
Instead of deep frying, you can also shallow fry this vada or you can even make dhebras and roast it on tawa/skillet.If you don’t have maize flour you can add whole wheat flour instead of it. If you are vegan add 1 lemon juice instead of curd or buttermilk.

turmeric: 1/4 tb spoon
red chilli powder: 1 tb spoon
cumin coriander powder: 1 tb spoon
sugar: 2 tb spoon
oil: 2 tb spoon
buttermilk: 3/4 cup
oil: to fry
