#1 Pumpkin Chocolate Chip Oatmeal Cookies

1/2 cup + 2 tbsp oats, small cut (45g + 2 tbsp)
1/4 tsp salt
1/2 tsp baking powder
1/2 tsp cinnamon or pumpkin pie seasoning
2 tsp flax seeds, ground or semi ground
3 heaping tbsp pumpkin pureé
how to make your own pumpkin pureé:
2 heaping tsp almond butter
1- 2 ½ tbsp raw sugar (choose how sweet you want it to be by either adding 1, 2 or 2 ½ tbsp)
A handful of chocolate chips
→ Serves 1 as a little breakfast, 2 as a snack

#2 Roasted Chickpea Trail Mix

½ can chickpeas (120g) (= 4,23 oz)
2 tsp olive oil
1 tsp maple or agave or rice syrup
salt to taste (I added a little over ¼ tsp)
other spices of choice like paprika, cumin …
3 tbsp rolled oats
A handful of sunflower seeds
A handful of pumpkin seeds
→ serves 1

#3 Banana Chocolate Chia Puddings

1 small banana, mashed
1 tbsp chia seeds
a pinch of salt
2 tsp unsweetened cocoa powder
⅓ cup non dairy milk (80ml)
extra banana slices (if you have a bigger banana use a quarter of that one as a topping)
Dark Chocolate chips
→ serves 1

#4 🍎 🏋️‍♂️

6 tbsp unsweetened apple banana or apple pear sauce
2 tsp vanilla protein powder

#5 Carrot Noodle Rice Cake Snack

2-3 carrots, cut into “noodles”
Oil for the pan
Salt to taste
Other spices of choice
1 tsp extra sesame oil

rice cakes or toast
vegan cream cheese or hummus

topping ideas: balsamic glaze, greens, microgreens, crushed walnuts, sriracha …

→ serves 1-2

#6 Blueberry Green Tea Latte

1 cup non dairy milk (250ml)
⅓ cup frozen blueberries (50g)
a pinch of salt
½ tsp vanilla
1 green tea tea bag
optional: ⅛ cup water (30ml)*

→ serves 1

*you can also just add the tea bag to the steaming milk directly for 1-2 min
