Easy 30 Minute Vegan Meal | Creamy Polenta with Roasted Broccoli Rabe

Roasted Broccoli Rabe

1 bunch broccoli rabe
2 tablespoons extra virgin olive oil
1/4 teaspoon salt
1/4 teaspoon pepper

Trim ends of broccoli rabe. Toss in remaining ingredients and roast at 425 degrees for 10-15 minutes, flipping midway.

Creamy Polenta

4 cups vegetable stock
1 teaspoon salt
1 cup polenta (cornmeal)
1 tablespoon nutritional yeast
1/4 cup coconut milk

Bring stock and salt to a boil. Slowly whisk in polenta. Cook on medium heat for about 5 minutes, whisking constantly, then lower heat and cook for 5 more minutes. Remove from heat and add in remaining ingredients.

White Bean Pan Sauce

1 tablespoon extra virgin olive oil
1 shallot, sliced into 1/4 inch half moons
1 tablespoon minced garlic
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon red pepper flakes
1/2 teaspoon dried thyme
1/4 cup white wine
1 tablespoon lemon juice
1 can cannellini beans, drained and rinsed
1/4 cup water
1 teaspoon tamari

Heat a pan and add in evoo. Add in shallots and saute for about 2 minutes. Add garlic and spices and cook for another minute. Deglaze the pan with wine and lemon juice and cook for about 2 minutes. Add remaining ingredients and cook for additional 3-5 minutes.
